To organize the GIF packs in Discord on a web browser, open the server you're in, click on '+' icon next to the chat input box, and select the GIF button. Then, navigate to the GIF pack you want to reorder, long tap on the GIF and select 'Options' and then drag to reorder. On mobile devices, the steps to customise GIFs in other platform are a bit different: open the server, tap on the GIF icon in the bottom right corner, and tapping-and-holding on the GIF you want to move. Select the 'Customise' option and drag the GIF to the desired position.

In general, most apps follow a similar pattern, where you need to open the media menu, long press on the item you want to move, and then drag it to the desired position. While reordering sticker and GIF packs might seem like a mundane task, it can make a big difference in your online experience.
